Simple 4th of July appetizer: Homemade bruchetta

If you don't already know this about me, I LOVE the 4th of July. Have you seen our family photo? #redwhiteandblue

Since this holiday, like any holiday, creeps up on us, I thought I would share a simple recipe that we eat weekly in the summer. It's especially delicious when you can get tomatoes right off the vine from your garden.

Ingredients:
2 medium tomatoes (preferably home grown)
4 basil leaves
3 Tbls. olive oil
1 1/2 tbls. balsamic vinegar (or more to your liking)
Pinch of Minced Garlic (or fresh garlic if you have it)
1 large french bread loaf

Preheat oven to 350. Slice bread into desired thickness (I like them thin). Toast in oven for about 5 minutes, or until desired toasty-ness (I know it's not a word). Dice tomatoes and put in a bowl. Its easiest to cut the tomatoes with a serrated knife. Chop basil leaves and stir in with tomatoes. Drizzle olive oil and balsamic vinegar, then sprinkle minced garlic. Let sit, if you can, so the flavors can blend.

This is such a quick and easy appetizer to bring to a party. I usually serve the bruchetta in a star dish and the bread on an american flag plate.

Enjoy!

What easy recipes do you have to share?
